This Chunky Lentil Soup is much more like a stew actually and is chock full of yummy lentils, tomatoes and butternut squash. It's very easy to make and probably only takes about 45 minutes, start to finish. A good recipe if you are craving soup but don?t want to stand around all day in the kitchen waiting for it to be ready. Try it topped with a teaspoon or two of grated parmesan, and with crusty bread to dip.

Recipe Ingredients for Chunky Lentil Stew

1 1/4 cup dry lentils
1 tbsp extra-virgin olive oil
180 g yellow onion
425 g butternut squash
1 1/2 cups organic vegetable broth
411 g canned diced tomatoes
1 tsp sea salt
1 pinch of chili powder
1 pinch of cayenne pepper

Recipe Directions for Chunky Lentil Stew

  1. Dice the butternut squash small, about 1/4 inch chunks. Chop the onion as well.

  2. Bring 5 cups of water to a boil then add the lentils and simmer for about 25 minutes or until tender. Drain.

  3. Meanwhile, heat the oil and saute the onion until soft, about 4 minutes or so. Stir in the squash, tomatoes and broth and simmer for about 10-15 minutes or until the squash is tender.

  4. Add the lentils and bring to a simmer. Season with salt, chile powder and cayenne pepper to taste.
