Tomato and Lentils pared off in a hearty soup like dish. Garnished with Parmesan and basil

Recipe Ingredients for Chunky Lentil Soup

1 1/4 cup green lentils
1 tbls Olive Oil
8 oz Chicken stock
28 oz crushed tomatoes
1 large onion
1 cup basil
1 tsp salt
2 cups butternut squash
1 pinch paprika
1 pinch chili powder

Recipe Directions for Chunky Lentil Soup

  1. Boil lentils in 5 cups of water for 20 minutes or until soft.

  2. Drain lentals.

  3. In a large soup pot add olive oil and bring to temp. Add chopped onions and cook till translucent.

  4. Add vegetable stock, canned tomatoes, squash, paprika, chili powder and salt and cover. Cook for 10 minutes till squash is tender.

  5. Add in lentils and stir till mixed.

  6. Pour in bowls and garnish with basil and Parmesan.
