Recipe Ingredients for chunky italian vegetable sauce for pasta

1 large spanish onion
3 garlic cloves
2 celery sticks
1 large courgette
1 yellow pepper
1/2 oz bayleaf
400 grams canned tomatoes, chopped with juice
2 tablespoons tomato puree
2 tablespoons olive oil
1 tablespoons balsamic vinegar
4 oz mushrooms
1 tablespoon dried mixed herbs
1 pepper to taste
1 tablespoon dried basil
1 oz sun dried tomatoes

Recipe Directions for chunky italian vegetable sauce for pasta

  1. cut everything into slices excluding the onion and garlic.

  2. finely chop the onion and garlic place garlic in with the sliced vegetables and the onion by itself.

  3. cut the sun dried tomatoes and place with chopped toms and puree.

  4. fry off the onion in the oil till soft, then turn heat right down low, and saute the sliced veggies with lid on. saute for 10 minutes, splash in the balsamic vinager, fry for a further 5 mins. then add the tomato mix herbs bayleaf and seasoning.

  5. simmer for 15 - 20 minutes while pasta is cooking.

  6. when pasta is cooked toss sauce with pasta and sprinkle parmesan to garnish.
