Organic Jonathan Apples makes this apple sauce a treat. This year's apples were a bit bland so I used the organic apple juice to cook it up and give it more flavor. Even if you just use water it will be world's better than any commercial variety on the market, it's well worth the time and effort. I like chunky style so I go to the extra work of 'manually' peeling, coring and slicing.

Recipe Ingredients for Chunky Homemade Apple Sauce

28 cups ripe organic Jonathan apples (peeled, cored, sliced)
32 oz knudsen organic apple

Recipe Directions for Chunky Homemade Apple Sauce

  1. Core, peel and slice apples using a manual hand crank apple processor. (Can be found at Pampered Chef, Williams and Sonoma or online.)

  2. Add to large 7.5 quart Le Creuset Dutch Oven or similar sized pan.

  3. Add apple juice.

  4. Note: Don't add sugar, it won't be needed.

  5. Cook on high till just at a boil, turn down to medium low heat and simmer for 3 or 4 hours stirring every 10-15 minutes.

  6. When all the apple chunks are very soft, mash a bit with a potato masher.

  7. Remove from heat and allow apple sauce to cool.

  8. Divide into freezable containers and enjoy! Makes a wonderful gift too.

  9. Optional ingredients: Cinnamon, ginger, clove, nutmeg, vanilla. Apple pie spice mix works too.

  10. WineSap, Honey Crisp, Granny Smith or any other 'firm' cooking apples work well. Golden Delicious, JonaGold or Red Delicious are a bit too soft and I don't recommend using them for cooking.
