A light grilled chicken salad with no mayo!

Recipe Ingredients for Chunky Chicken Salad

1 pound Chicken Breast, Grilled
1 Red Apple
1/4 cup Almonds
2 tablespoons low fat sour cream
1 teaspoon Mustard
1 teaspoon Honey
1 Black Pepper

Recipe Directions for Chunky Chicken Salad

  1. Marinate the chicken breast in a nice lime/honey/mustard marinade overnight.

  2. Grill the chicken breast until tender with a nice char. Let cool.

  3. Chop the chicken breast into 1/4 inch chunks, or tear apart, for a more rustic feel.

  4. Chop the apple similarly to the chicken.

  5. Combine chicken, apple and almonds.

  6. Mix wet ingredients into the dressing and toss with the chicken.

  7. Season with black pepper.
