Hearty soup for the cold winter days..

Recipe Ingredients for Chunky Cabbage soup

2 cup, chopped Cabbage
4 medium raw Tomato Roma
1 tbsp Extra Virgin Olive Oil
1/2 medium (2-1/2" dia) Onions
2 cup, diced Celery
1 cup Lentils, Mature Seeds
2 oz Fresh Boneless Skinless Chicken Breasts
1 1/2 medium Carrots
1/2 tsp Garlic
1/4 cup Barley, Pearled

Recipe Directions for Chunky Cabbage soup

  1. Cook barley and lentils separately as per package instructions

  2. In a crockpot, saute onions, garlic, carrots and celery in olive oil. Add a bay leaf and some Thyme.

  3. Once the veggies are soft, add the chopped cabbage and tomatoes and saute for a further 15 min or so.

  4. Dissolve 1 chicken stock cube in 1L of water and add to the veggies. Also adding the cooked barley and lentils.

  5. Simmer covered for about 45min and the soup is ready to be served!
