Recipe Ingredients for Chunky Black Bean Chili

1 pound Round Steak, Cut into small cubes
2 tablespoons Extra Virgin Olive Oil
29 ounces Diced Tomatoes and Green Chilies (2 cans)
30 ounces Canned Black Beans, Drained (2 Cans)
1 Onion, Chopped
1 Bell Pepper, Chopped
1 tablespoon Minced Garlic
2 teaspoons Cumin
2 teaspoons Chili Powder
1 teaspoon Salt

Recipe Directions for Chunky Black Bean Chili

  1. Brown meat in olive oil

  2. Add garlic, onion and pepper and cook about 5 minutes

  3. Add canned tomatoes and bring to a boil, stirring frequently

  4. Stir in cumin, chili powder and salt

  5. Add drained black beans to the pot and mix.

  6. Bring to a boil then reduce heat to medium

  7. Stirring frequently, cook uncovered until 1/3 of liquid is gone

  8. *Serve with chopped tomatoes, lettuce and diced onion in a wrap or in a bowl. The kids add sour cream and shredded cheese, too.
