Recipe Ingredients for Chunky Beef Barley Soup

1 1/2 lbs stew meat, cubed
2 garlic cloves, diced
4 c beef broth, low sodium
14 oz can tomatoes, diced
1/2 c onion, chopped
1 tsp basil
1/4 tsp pepper
1 c sweet yellow corn
1/4 c all-purpose flour
3 tbsp olive oil
1 tsp garlic salt
2 c water
3 carrots, large, peeled and diced
1 c celery, thinly sliced
1/2 c turnip, chopped and peeled
1 c pearl barley

Recipe Directions for Chunky Beef Barley Soup

Dredge cubes of meat in flour. Brown meat with garlic and onion in hot oil in 4 quart Dutch oven over medium-high heat. Add broth and enough water to make 6 cups liquid, tomatoes, celery, carrots, turnip, barley, salt and pepper. Bring to a boil over high heat. Reduce heat to low. Cover and simmer 1.5 hours, or until barley and veggies are tender.
