This chili is packed with vegetables and three different types of beans. It's got great flavor with a pleasant--not overwhelming--amount of heat.

Recipe Ingredients for Chunky Bean and Vegetable Chili

1 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
28 oz Diced Tomatoes
15 1/2 oz Kidney Beans
15 oz Old El Paso Refried Beans Spicy Fat Free
15 1/2 oz Black Beans
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
2 cup diced Potato, Flesh And Skin
2 cup Beans, Snap, Green
2 cup, chopped Squash, Summer, Zucchini, Includes Skin
2 cup, chopped Carrots
2 cup, diced Celery
4 oz Green Chilies
1 large Onions
4 clove Garlic
64 oz Soup, chicken broth, canned, less/reduced sodium
1 tsp Pepper, Red Or Cayenne
1 tbsp Chili Powder
1 tbsp Paprika
1 tsp Oregano, Ground
5 grams Cumin Powder
10 sec spray Cooking Spray

Recipe Directions for Chunky Bean and Vegetable Chili

Coat a large pot with cooking spray and set over medium heat. Cook onion, stirring occasionally, until soft. Add garlic and cook stirring for about 1 minute. Add carrots, celery, potato, zucchini, green beans and peppers (red and yellow). Cook stirring occasionally for about 5 minutes. Add chili powder, paprika, cumin, oregano, red pepper, and stir for 1 minute. Stir in broth, tomatoes, green chilies and beans and bring to a boil. Reduce heat to low and simmer uncovered, stirring every 5 minutes or so, until potatoes and carrots are cooked to desired tenderness.
