vegan substitute for chicken salad, great on bread or crackers, or served with crudite

Recipe Ingredients for Chunky Artichoke and Chick Pea Salad

14 ounce artichokes
14 ounce garbanzo beans
1/4 c. onions
1/4 c. sweet pickles
1/4 c. green pepper
1/4 c. chopped celery
1/4 c. light mayonnaise
2 tsp. olive oil
1 tsp. capers
1 clove garlic, minced
1 tsp Old Bay
1 tsp dijon mustard

Recipe Directions for Chunky Artichoke and Chick Pea Salad

Pulse all ingredients in food processor until chunky. Season with salt and pepper, if desired. Chill at least 30 minutes, or overnight. Better the second day.
