Took these off a website and made a few adjustments.

Recipe Ingredients for Chunky Apple Muffins

4 cups apples, 1/4 inch dice (1 1/2 lbs)
3/4 cup brown sugar
2 eggs
1/2 cup unsweetened apple sauce
2 teaspoons vanilla
1 cup whole wheat flour
1 cup flour
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
1 cup raisins
1/2 cup walnuts

Recipe Directions for Chunky Apple Muffins

  1. Preheat oven to 325

  2. In a large bowl, toss apples and the sugar.

  3. In a small bowl whist eggs, applesauce, and vanilla.

  4. In a third bowl, stir together well with a fork the flour, baking soda, cinnamon and salt.

  5. Stir the egg mixture into the apple mixture; add the four and stir the batter until just combined.

  6. Batter will be stiff

  7. Stir in raisings and walnuts.

  8. Spray muffin tins with non-stick spray and bake for 25-30 min.
