Yummy scrummy indian stew with potatoes and spice

Recipe Ingredients for Chunkaloo

2 tablespoons vegetable oil
1 large onion, chopped
1 garlic clove, chopped finely
28 grams g) piece root ginger, chopped finely
1/2 teaspoon turmeric
1/2 teaspoon cayenne
1/2 tablespoon ground coriander
1/2 teaspoon ground cumin
1/2 tablespoons green cardamon, left whole
1/2 teaspoon cloves, left whole
8 oz soya chunks, rehydrated makes 16 oz
1 pint water, boiling to ryhdrate soya
5 grams marigold swiss vegetable powder, to rehydrate the soya
7 1/2 fl oz water
1 salt, season to taste
1 grams bayleaf, 1 leaves
10 oz potatoes, scrubbed and chunked

Recipe Directions for Chunkaloo

  1. Rehydrate the soya chunks with the pint of water and stock. Leave to rehydrate.

  2. Heat the oil in a large saucepan add the onions and fry untill golden brown. and the garlic and fry till sweet, stir in the ginger and fry for 4 mins, stir in the turmeric cayenne coriander and cumin, fry for 6 mins, stirring frequently, add a spoonful or 2 of the 7 1/2 fl oz water if the mixture becomes too dry.

  3. Add the soya chunks and mix with the spices adding more liquid if it becomes dry.

  4. Now add the remaining liquid the potatoes,whole cloves and whole cadamom and bay leaf, bring to the boil, then simmer and cook for 30 minutes or until potatoes are cooked. season to taste.
