A wonderful ready to eat flavorful snack and/or meal that will last in your fridge for up one week or more! Great for those in a hurry lunches or famished after work snacks. For less calories eat less olives.

Recipe Ingredients for Chum's (Mom's) Greek Salad

2 large tomatoes
2 large green peppers
1 English cucumber
1/2 Spanish onion
1/2 c. feta cheese
75 g (15) Kalamata olives
2 tbsp. extra virgin olive oil
2 tbsp. apple cider vinegar
1/2 tsp. salt
1 tbsp. pepper
1 tbsp. garlic powder
1 tbsp. oregano

Recipe Directions for Chum's (Mom's) Greek Salad

  1. Mix spices together in a large salad bowl, add all liquid ingredients, let stand.

  2. Dice tomatoes, cucumbers, and green peppers add to liquid mixture and toss.

  3. Cut onion in half lengthwise, remove core, slice thinly lengthwise, add strips to salad.

  4. Add feta cheese and olives then toss.

  5. Store covered in fridge for up to 1 week or more.
