Chum's secret bannock mix is no longer a secret...lol. The ingredients have been modified a bit to make it healthier. Especially for diabetics who need whole wheat in their diet to slow down sugar processing. For less calories omit oil and store in bag when warm to keep it soft.

Recipe Ingredients for Chum's (Mom's) Bannock

1 1/2 c all purpose flour
1 1/2 c whole wheat flour
2 tsp baking powder
1/2 tsp salt
1/2 c skim milk powder
2 tbsp olive oil
1 c water

Recipe Directions for Chum's (Mom's) Bannock

  1. Sift all dry ingredients together, stir, make a hollow in the centre.

  2. Mix all liquid ingredients together in a cup, pour into the centre of the hollow until all ingredients are combined.

  3. Knead ingredients together 5-7 times until all ingredients are well combined.

  4. Flatten out dough on a cookie sheet form into a large round, pierce all over with a fork.

  5. Bake at 375 degrees F for 30 minutes, turn once after 15 minutes.

  6. Remove from oven, let cool standing up sideways (may be greased on outside with butter or margarine but will add more calories).

  7. When cool, cut into 24 pieces and place in a plastic bag to store.

  8. Enjoy!
