Chum's Beef Stroganoff Recipe

A heartier meal that may be hard to keep to small portions. If you have the will power you could prepare this and freeze in 3/4 cup portions in zip lock bags and take with you to work for a quick microwaveable lunch.

Recipe Ingredients for Chum's Beef Stroganoff

1 lb beef, lean, thin strips
1/2 onion, diced
1 c sliced mushrooms
1 tsp pepper
1 tsp garlic
1 tsp worchestershire sauce
2 1/2 c cream of mushroom soup
2 c water
2 c noodles
1 oz cider vinegar
1 tbsp olive oil

Recipe Directions for Chum's Beef Stroganoff

  1. Saute the beef in olive oil do not turn over until dark brown, (to add flavor and to keep moist & tender).

  2. Stir and continue cooking meat, when meat is fully cooked add onions, mushrooms, and spices, continue to saute for 2-3 minutes.

  3. Degrease the pan with some boiling water, wait till all residue is cleared off pan.

  4. Add condensed mushroom soup and slowly stir in 3 cups of additional boiling water (recipe calls for prepared soup due to nutritional information-prepared soup would require 1 can of milk or water) I use water for less calories.

  5. Stir in noodles (fusilli, linguini, or fettucini).

  6. Stir in cider vinegar (used in place of sour cream for less calories).

  7. Bring to a boil, reduce heat, cover and simmer for 10 min.

  8. Sprinkle with dried parsley to garnish.
