Vegetarian Lasagna-A mess to create, but so yummy. Cut the baked finished product into 12 servings and freeze individually on cookie sheet. Bag when frozen. For a quick dinner microwave a portion.

Recipe Ingredients for Chuck's Squash Lasagna

3/4 pound mozzarella cheese
2 lb spinach
4 cups butternut squash
3 cups chopped broccoli
1 pound ricotta cheese
6 oz tomato paste

Recipe Directions for Chuck's Squash Lasagna

Layer cheese, sliced squash, broccoli, spinach and tomato paste in 9x13 pan. Bake for an hour at 350.
