Recipe Ingredients for Chuck's Ham Loaf mit Cornichons

16 oz Smoked Ham Off Bone
1 medium Apple
1 serving Onions
2 large Egg, White
1 tsp Mustard Powder
0.25 tsp Allspice, Ground
1/4 tsp Nutmeg
20 g Soft Finished Flakes
0.25 tsp Pepper, Black
1 oz Cornichons
6 serving Horseradish
37 4/5 grams Blueberry Rhubarb Jam
8 oz Pork, Fresh, Ground, Cooked
4 oz Sour Cream

Recipe Directions for Chuck's Ham Loaf mit Cornichons

  1. Heat oven to 350 degrees.

  2. Bone and dice ham, peel and finely chop onion and apple.

  3. Process ham and add pork and process until pretty fine.

  4. In large bowl combine eggs, apple, onion, spices, sour cream, panko flakes and whole cornichons. Mix well with hands.

  5. Lightly grease shallow pan and form into a loaf.

  6. Bake at 350 for 60+min basting with mix of jam (currant is also good) and horseradish.

  7. Bake until internal is 155 degrees.
