3 ear, large (7-3/4" to 9" long) yields Corn, Sweet, White
2 medium Squash, Summer, Zucchini, Includes Skin
3 tbsp chopped Chives
1 medium raw Bell Pepper Green
1 serving Extra Virgin Olive Oil
1.5 cup Edamame
2 dash Salt, Table
2 dash Pepper, Black

Recipe Directions for Christy's Grilled Summer Succotash

preheat grill to medium heat. brush corn on cob, zucchini and bell pepper. dash s/p on zucchini. grill all 3 until lightly charred on all sides. cut corn off cob. remove skin and seeds from bell. half moon zucchini. add remaining ingredients to bowl. mix well and serve warm. (optional: grate fresh parm as topping)
