Recipe Ingredients for Christmas Shortbread Cookies

3/4 pound butter
1 cup sugar
1 tsp vanilla extract
3 cups whole wheat flour
1/4 tsp salt
3 oz semisweet chocolate

Recipe Directions for Christmas Shortbread Cookies

  1. Cream together butter and sugar.

  2. Add vanilla and mix slightly.

  3. Mix in flour and salt until dough pulls from sides of bowl to form ball.

  4. Turn dough out on floured surface and form into a thick disk shape.

  5. Wrap in plastic and refrigerate for 30 minutes.

  6. Roll dough on floured surface to 1/2 inch thickness.

  7. Cut into 1X3 inch rectangles.

  8. Place on ungreased cookie sheet and bake in pre-heated 350 degrees oven for20 to 25 minutes. The edges should begin to turn brown.

  9. While cookies cool to room temperature, prepare chocolate. Place half the chocolate in a microwavable bowl. Microwave it in 30 second increments stirring after each 30 seconds. Heat just until the chocolate is melted when stirred. Add the remaining chocolate and stir to melt it in. No further heat is needed.

  10. Place the cooled cookies on a parchment lined baking sheet and either dip or coat the bottom half of the cookie or drizzle thin lines of chocolate on the tops.

  11. Makes approximately 4 dozen cookies.
