Recipe Ingredients for Christmas Pork Chops

18 oz boneless pork chops
1 T olive oil
1 c Pineapple chunks, in juice, drained
1 c whole berry cranberry sauce
1 c pineapple juice, separated
1 T brown sugar
1 T mustard, prepared
1 T corn starch

Recipe Directions for Christmas Pork Chops

  1. In a small bowl, mix mustard, 1/4 cup pineapple juice and brown sugar. Mix until sugar dissolves. Set aside.

  2. Add oil to pan with the pork chops. Sear both sides on high heat.

  3. Reduce heat to medium and add mixture. Mix in cranberry sauce and pineapple chunks with half of the juice. Cover tightly and simmer 10 minutes.

  4. Uncover and stir. Check pork for doneness by cutting into the thickest part to make sure the juices run clear. If cooked through, remove meat.

  5. Mix corn starch with remaining pineapple sauce, untill corn starch is dissolved. Pour into sauce and increase heat to high, stirring constantly. Cook 5 minutes or until desired thickness. Sauce will thicken upon standing.

  6. Pour sauce over chops and serve hot.
