This is a rich, filling bean & barley soup. Notice the number of ingredients that need to be pre-soaked -- so allow plenty of time for prep....

Recipe Ingredients for Christmas Bean & Barley Soup

1 lb lima beans, dry
8 oz pearl barley
8 oz smoked ham
8 c chicken stock
4 c water
16 oz fat free refried beans
2 T basil
4 oz red chili peppers
4 oz onion
2 cloves garlic
1/2 t cumin
1 1/2 t smoked paprika
2 t salt
2 T oregano
1/2 t black pepper
4 oz mushrooms

Recipe Directions for Christmas Bean & Barley Soup

  1. Use Christmas Lima Beans if possible. (they are available over the net at gourmetstore.com -- and worth the search. Soak the beans overnight -- cover by at least 4 inches -- they get MUCH bigger.

  2. Rince the dried New Mexico red chilis and soak them for at least 2 hours in warm water. (if you're using the frozen puree'd variety, skip these steps.)

  3. Finely mince the ham & onions and set aside.

  4. Rinse the soaked beans and add to pot with water and chicken stock. Add barley, ham, onions, minced herbs, crushed garlic, spices & pepper. Bring to a boil.

  5. Using a food processor, puree soaked chilis with 1c warm water (remove stems first, and as many seeds as you wish -- the more seeds you leave in, the hotter the soup will be) Add the puree to the soup pot.

  6. Do not add the salt yet.

  7. Bring to a boil, and simmer, covered for 3-4 hours.

  8. Thin the can of fat free refried beans with a can of hot water, and add to soup to thicken the stock. Add water as needed to bring the volume up to 5 quarts.

  9. Season to taste with salt and additional heat (hot sauce etc)
