Lentil and brown rice casserole - a very high fibre dinner.

Recipe Ingredients for Christine's Lentil Casserole

3 cups chicken broth
3/4 cup dry lentils
1/2 cup uncooked brown rice
3/4 cup chopped onion
1/2 tsp basil, dried
1/4 tsp oregano
1/4 tsp thyme
1 clove fresh garlic, minced
3/4 cup grated cheddar cheese

Recipe Directions for Christine's Lentil Casserole

  1. Heat oven to 300 degrees

  2. Mix all the ingredients except the cheese in a oven-safe casserole dish and stir to mix

  3. Bake for 2 to 2 1/2 hours, stirring after about an hour

  4. Once it's baked, sprinkle with the cheddar cheese and put it under the broiler until cheese melts and is starting to brown.

  5. *Note - you can add meat or other veggies to this dish. Roasted chicken from the grocery store works well, as does Chorizo sausage, although it increases the calorie/fat count. Also, note that the dish is just 245 calories per serving without the cheese. Serving sizes are very generous, and this could easily make 6 smaller portions. Finally, it's good to note that the sodium estimate is based on canned broth - a low sodium broth or homemade broth would bring this level down.
