tricky but tasty! Can always be used as chocolate syrup if it doesn't "turn"!!

Recipe Ingredients for Christine's Famous Chocolate Fudge

2 cups white sugar
1/4 cup cocoa
1/2 tsp salt
1 cup milk
3 tbsp corn syrup
2 tsp vanilla
1 tbsp butter

Recipe Directions for Christine's Famous Chocolate Fudge

  1. Sift together through a strainer the sugar, cocoa and salt.

  2. Best to preheat the milk in the microwave and whisk together with the sugar mix. Add the corn syrup and whisk.

  3. Stir over medium heat constantly until it comes to a boil. Boil gently until temperature reaches soft-firm ball (235-238 deg on candy therm.) I test it in ice cold water with a few drops to see if it forms a firm ball between fingers (usually floats on the surface as a ball)

  4. Let cool by pouring into another pot that has the butter and vanilla in it.

  5. Then when you can hold it, start beating it with a spoon until it "turns" - dull colour, and much thicker.

  6. Pour into a bread loaf type of pan, or on an aluminum pie plate. Best if greased first with butter.
