Makes 14 servings



Fast and easy in the food processor! (or mash by hand, and whisk together) This recipe could be put into a loaf pan as well. Chopped walnuts/pecans would be nice in it, and add some omega 3!

Recipe Ingredients for Christine's Best banana muffins

3 bananas
1/2 cup oil
1 cup sugar
1 egg
1 3/4 cup white flour
1 tsp salt
1 tsp baking powder
1 tsp baking soda

Recipe Directions for Christine's Best banana muffins

  1. Mash or put bananas in food processor. Whisk (or add in the processor) the oil and sugar and egg.

  2. Add dry ingredients and stir briefly to mix.

  3. Use an icecream scoop to put the batter into the paper lined muffin tin. (or just put the whole batter into a well greased bread loaf pan)

  4. Bake muffins for 15 min at 400 (or 375)

  5. or bake loaf at 350 for 30-35 min.
