A fast 2-bean chili great served with avocado and cheese. Also can add rice or noodles to make a stew type meal. Makes 5 1-cup servings

Recipe Ingredients for Christine's 2-Bean Chili

15 oz can Black Beans, drained & rinsed
15 oz can Beans, Dark Red, drained & rinsed
10 oz can tomatoes, with green chilies, Ro*Tel
15 oz can tomatoes, diced, with liquid
1 small onion
1 T olive oil
1 dash of oregano
1/2 cup salsa

Recipe Directions for Christine's 2-Bean Chili

  1. Dice onion and add to pan with a teaspoon or so of olive oil and a dash of oregano.

  2. Cook on med-low till onions are translucent.

  3. Add tomatoes, and beans (drain the beans as you like) and simmer 25 mins.

  4. About half way through add 1/4-1/2cup salsa of choice.

  5. Stir occasionally so it doesn't stick.

  6. Serve with choice of noodles, rice, cheese and/or avocado.
