Took an idea from Bob the trainer's menu (Biggest Loser Bob) CAUTION - YOU MUST LIKE PEPPER - THIS HAS A BITE. If you don't like spicy or hot, substitute the jalapeno pepper with something else (fresh red pepper, mushroom, carrots, etc ...)

Recipe Ingredients for Chris and Bob's Omlette

3 large egg whites
1 large egg, whole
1/2 oz half-and-half
1 tsp canola oil
1 pinch parsley
2 pinch basil
2 pinch sea salt
2 pinch paprika
1 pinch chili powder
1/2 cup onion chopped
1/4 cup jalapeno pepper
1/4 sweet yellow pepper
1 tsp olive oil
1/4 oz lime juice
1 slice american cheese

Recipe Directions for Chris and Bob's Omlette

  1. Mix egg whites, and whole egg with seasonings and half-and-half

  2. Note: the half-and-half is for body only and can be substituted with something else if you prefer

  3. saute onion, jalapeno, yellow pepper with the 1 tsp of olive oil. when cooked, squeeze in lime juice

  4. set saute'd veggies aside

  5. cook omlette on high heat with canola oil

  6. add veggies

  7. tear slice of american cheese into strips and lay across

  8. fold omelette - give cheese time to melt!

  9. serves 1 - 2 depending upon your appetite for the peppers
