As with most of my food endeavors, this was a simple case of "I really need to do something with these ingredients". The impetus here: I had quite a few eggs that were nearing their expiration date, as well as a bag of potatoes that had been on hand for awhile and the last bit of some spinach in the freezer. Well, the solution to THAT set of ingredients is pretty simple! The chorizo is definitely not good for you and could easily be omitted, but I like the flavor it gives and it's so spread out through the dish that it's not TOO terrible.

Recipe Ingredients for Chorizo, Spinach and Potato Fritatta

3 medium potatoes, peeled and sliced into half-moons
1 small onion, chopped
2 cloves garlic, minced
1 link chorizo
1 dash of sage
1 dash of salt
1 dash of white pepper
1 dash of black pepper
6 eggs
1/2 cup lowfat milk
1/2 cup cooked spinach
1 tbsp oil
1/2 cup shredded cheddar cheese

Recipe Directions for Chorizo, Spinach and Potato Fritatta

  1. Heat oil in a large skillet; you'll want to choose a skillet with relatively high walls. Add garlic, potatoes, onions, and seasonings; sautee until potatoes are slightly softened.

  2. Add chorizo to the pan and stir to mix evenly with the other ingredients. Drain off excess grease if necessary. Add

  3. Meanwhile, beat together eggs and milk with a whisk or fork until slightly frothy. Sprinkle spinach over the potato mixture, then pour in egg mixture and stir until evenly distributed.

  4. Lower to medium heat and cover 5-7 minutes or until eggs are done. If you wish, sprinkle shredded cheese over top of egg mixture before covering.

  5. Conversely, you can also finish it in the oven.

  6. Remove from heat and allow to set while still covered before serving.
