Recipe Ingredients for Chorizo Soup

2 medium yellow onions, chopped
3 medium potatoes, cubed
3 cloves garlic, smashed
2 tbs olive oil
15 oz chickpeas
15 oz diced tomatoes
10 oz chorizo sausage, sliced
1 lb kale, cut into bite sized pieces
5 cups chicken broth

Recipe Directions for Chorizo Soup

  1. *This soup is much more healthy if you cook the sausage and drain the fat before adding to the soup. Unfortunately I could find no good way to reflect this step in the nutritional information.

  2. Slice and cook the sausage and drain the fat

  3. Peel and cube the potatoes and onions

  4. Smash garlic cloves with the side of a knife

  5. Pour olive oil into a deep heavy-bottomed pot

  6. Heat on medium high, add garlic and cook until fragrant (under a minute)

  7. Add potatoes and onions and stir

  8. Reduce heat to medium or medium low and cook 5-10 minutes, stiring occasionally

  9. Add kale and cover for 10 minutes

  10. Add broth, chickpeas, tomatoes, sausage and salt and pepper

  11. Cover and bring to a boil

  12. Reduce to low heat and simmer for 10-15 min

  13. Enjoy!
