A little bit of spice with a great taste. Serve brown rice, sausage with onions, garlic, and zucchini and beans on top (Depending how you do your beans)

Recipe Ingredients for Chorizo Sausage with veggies

1 lb Chorizo Sausage
1 medium onion
1 zucchini
4 cups brown rice
14 cilantro
425 g pinto beans
3 garlic cloves

Recipe Directions for Chorizo Sausage with veggies

  1. Saute onions and garlic add sausage brown it and then add in sliced zucchini. Simmer till zucchini is tender and sausage is done.

  2. Cook rice according to box. (optional: add in cilantro and a splash of lime to taste)

  3. Beans. I place the beans in my Magic Bullet with some garlic, cilantro, onions, water and small amount of olive oil and blend them to make them into re-fried beans. Otherwise place them in with the sausage when you add the zucchini.
