Spicy Chorizo with pea and mint soup

Recipe Ingredients for Chorizo, Pea and Mint Soup

1000 grams Fresh Frozen Petite Peas
100 grams Shallots
1 serving Ham Stock Cube (Knorr)
0.5 serving Asda Spicy Chorizo
1 oz Mint
1 serving Extra Virgin Olive Oil

Recipe Directions for Chorizo, Pea and Mint Soup

  1. Cut Chorizo into small pieces

  2. Add 1tbsp olive oil to a deep pan and fry the chorizo for a couple of minutes

  3. Chop shallots

  4. Remove chorizo from an and set to one side

  5. Add shallots to chorizo juices and oil with 1 tbsp water and fry for a few mins until softened

  6. Add the peas to the pan and stir

  7. Add 1litre of water and the ham stock cube

  8. Boil the veg and stock for approx 10 mins until peas are softened

  9. Blend the veg with the mint until smooth

  10. Add back to the pan with the chorizo and season
