Chorizo Gulash Recipe

Hungarian style gulash using chorizo instead of stew beef.

Recipe Ingredients for Chorizo gulash

1 cup, chopped Peppers, Sweet, Green
3 link (4" long) Chorizo, Pork And Beef
3 tbsp chopped Onions
1.5 cup Diced Tomatoes
5 piece Tomatoes, Sun-dried
2 clove Garlic
2 tsp Paprika
8 potato (2-1/2" dia, sphere) Potatoes, Boiled, Cooked In Skin, Flesh
1 cup Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds

Recipe Directions for Chorizo gulash

  1. Start boiling the potatoes as this will take the longest.

  2. Cut up the rest of the ingredients to whatever size you prefer in a stew. Put all ingredients besides the green peppers and paprika in a pot and let stew for a good half an hour minimum.

  3. Turn off the heat to the stew pot once the potatoes are almost done. Add paprika and peppers and let it sit for another 20 minutes or so. This cooks the peppers just slightly so they remain somewhat crispy. (You can cook the heck out of them if you like but I prefer them slightly crispy still.)

  4. Serve with potatoes and (if you like) a bit of sour cream on top.
