Recipe Ingredients for Chorizo Frittata - Lower carb

1 tbls canola oil
1/2 green bell pepper, diced
1 small onion, sliced
4 oz chorizo, cooked, crumbled, drained
2/3 cup salsa
15 oz Egg Beaters Southwestern or 8 eggs
6 oz Cheddar, shredded

Recipe Directions for Chorizo Frittata - Lower carb

  1. In a large, heavy skilled (cast iron), heat oil and saute the green pepper and onion - 3 min

  2. Add chorizo and salsa, stir, heat through

  3. Spread into even layer

  4. Poor in eggs

  5. Turn to low and cover - 7 -10 min

  6. Top with cheese and put under broiler for 2-3 min until cheese melts.

  7. Serve
