Chorizo Soy Sausage needs to be added to your food log since it wouldn't pull into this. Look up Trader Joe's Soy Chorizo and it will come right up.

Recipe Ingredients for Chorizo Eggs

2 large potato, cubed
3 tbsp canola oil
6 eggs
1/4 tsp salt
1/4 tsp pepper

Recipe Directions for Chorizo Eggs

Heat 1 T oil in pan and add soy chorizo. Cook til warmed thru and set aside in large bowl/serving dish. Heat 1 T oil in same pan and then add potatoes that have been cubed and cooked in the microwave for 3-4 minutes. Fry potatoes for 3-4 minutes till a little brown. move into serving dish. Heat 1 T oil in same pan and then add eggs and cook until done. Add to serving dish and toss together until blended. Serve hot.
