Recipe Ingredients for Chorizo and Eggs

8 oz chorizo, drain fat
6 egg
2 egg whites
6 oz potato

Recipe Directions for Chorizo and Eggs

Remove chorizo from the casing. Brown and drain most of the fat.Microwave the potato for about 3 minutes. Remove skin and dice. Add to the chorizo. Beat eggs and egg whites. Add to the chorizo and potatoes. Cook and stir slighlty. Serve with corn tortillas.
