Recipe Ingredients for Chorizo Chickpea Stew GI Jane

3 oz chickpeas, soaked cooked and drained or canned and drained
1 oz chorizo sausage
1/2 onion, sliced
1 red pepper, sliced
200 g passata
1 cooking spray

Recipe Directions for Chorizo Chickpea Stew GI Jane

  1. Grease a non-stick pan with a little cooking spray

  2. Add the chopped chorizo and cook on a low heat until the fat starts to run a little

  3. Add the onion and sliced red peppers and cook for a few minutes

  4. Add the passata and chickpeas and cook, uncovered for about 15 - 20 minutes so that the sauce reduces slightly

  5. Serve over some cooked brown rice and with a green side-salad
