Good soup, but very spicy. If you want it less spicy, use regular tomatoes without the green chile.

Recipe Ingredients for Chopped Vegetables Soup

14.5 oz Tomatoes Diced with Green Chilies
0.25 head, medium (about 5-3/4" dia) Cabbage
60 grams Carrots
1 stalk, medium (7-1/2" - 8" long) Celery
0..5 medium (2-1/2" dia) Onions
10 grams Asparagus
2 serving Chicken Broth
0.13 tsp Spices Ground White Pepper
0.1 tsp Rosemary, Dried
0.25 tsp Garlic Powder
0.67 cup Vegetables, Mixed
0.5 cup Rice, Brown, Long-grain, Cooked
0.5 cup pieces Mushrooms

Recipe Directions for Chopped Vegetables Soup

  1. Place all ingredients except broth in Vita-Mix container and cover with water.

  2. Secure 2 part lid. Select Variable, speed #1.

  3. Turn on machine and quicly increase speed to #3 or #4. Run for 5 to 10 seconds or until vegetables are chopped. If necessary, use the tamper to press any ingredients into the blades while processing.

  4. Pour ingredients into a large soup pot. Add broth. Bring to boil, then reduce heat and simmer until vegetables are tender. Add additional seasonings, if desired.

  5. Note: For a chunkier soup, select Variable, speed #2 or #3.
