Qty- 1 cucumber 1 pint grape tomatoes 1/4 cup red onion (app1/2 onion) 1/2 cup chopped parsley 1/2 cup chopped kalamata olives 14 oz garbanzo beans 4 oz crumbled feta

Recipe Ingredients for chopped salad

1 cup, pared, chopped Cucumber, Peeled
1/2 cup chopped raw Grape Tomatoes
1/2 cup Garbanzo Beans
1 medium raw Onion Red
3 olives Kalamata Whole Olives
1 oz Feta Cheese Crumbles
1 serving Extra Virgin Olive Oil
1 tsp Vinegar red wine
1 clove Garlic
1 inner leaf Lettuce, Cos Or Romaine

Recipe Directions for chopped salad

  1. Cut cucumber in half lengthwise & scoop out seeds-cut into small cubes

  2. Cut all grape tomatoes into quarters

  3. Put tomatoes & cucumber in a commander, cover with salt & let sit for at least 15 minutes to drain out water

  4. Chop red onion & parsley together in veggie chopper

  5. Cut kalamata olives into small pcs.

  6. Build dressing in the bowl with 3 Tbsp ea EVOO & vinegar and 1 clove garlic minced.

  7. Add all except lettuce & feta and stir well to mix.

  8. Add lettuce & feta.
