Options: Add a sprinkling of Blue Cheese to this for an excellent variation. For a lower-fat version of this recipe, do not add avacado.

Recipe Ingredients for Chopped Salad


Salad:
7 cups Romaine Lettuce, chopped
10 grams Cherry Tomatoes, halved
1 cup Avacado, cubed
8 ounces Garbanzo Beans
140 grams Spaghetti, boiled, no salt
2 cups Chicken Breasts, grilled, cubed

Dressing:
1 tbsp. Dried Mustard
1 tbsp. Sugar
1/2 c. Water
1/2 c. Red Wine Vinegar
1 c. Olive Oil
2 tsp. Oregano
1/2 tsp. Red Pepper
1/2 tsp. Fresh Ground Black Pepper
1 pinch of salt

Recipe Directions for Chopped Salad

  1. Combine chopped lettuce, halved (or diced) tomatoes, cubed avacado, drained Garbanzo beans, cooked and drained Ditalini (salad macaroni) pasta, and cubed cooked (grilled) chicken breast in a large salad bowl. Toss.

  2. In a separate bowl, mix dried mustard, sugar, water, red wine vinegar, olive oil, oregano, red pepper, freshly ground black pepper and salt. Shake vigorously before dressing salad, as separation is normal.
