Chopped vegetable salad with garbanzo beans

Recipe Ingredients for Chopped salad

4 fresh tomato, chopped
1 cucumber, peeled and chopped
1 yellow bell pepper, chopped
1 orange bell pepper, chopped
1/2 red onion, chopped
14 oz artichoke, chopped
1 avocado, diced
14 oz garbano beans,
1 T red wine vinegar
1 T balsamic vinegar
2 T olive oil
1 t mustard
1 T oregano

Recipe Directions for Chopped salad

  1. Combine the last five ingredients with a whisk until the mixture emulsifies.

  2. Combine the remaining ingredients in a bowl and toss with the salad dressing.

  3. Let the salad marinate for at least 30 minutes.

  4. Let salad sit at room temperature for 30 prior to serving.
