Recipe Ingredients for Chopped liver

1 1/2 lbs chicken livers
1 large onion chopped
1 1/2 tbsp coconut oil
1 salt and pepper
4 hard boiled eggs

Recipe Directions for Chopped liver

  1. Saute the onions in the coconut oil until soft but not brown in a very large pan

  2. pick over the livers and trim any extra fat or bits

  3. add to the pan, and cook a few at a time until browned on the outside and still pink in the middle.

  4. push cooked livers to the side and continue browning in batches.

  5. Cool mixture

  6. pull out the livers and cut into little bits

  7. return to the pan, and begin mashing with a fork

  8. chop the hardboiled eggs, and add them in gradually while you continue to mash the mix to the desired texture

  9. chill and store in the fridge tightly covered for up to a week.
