Recipe Ingredients for Chopped Cucumber Salad with Pomegranate, Feta and Mint

1/4 cup lemon juice
2 tbsp olive oil
2 English cucumbers
174 g pomegranate seeds
1/3 cup fresh mint leaves, coarsely torn
1 salt and pepper to taste
1 cup feta cheese, crumbled

Recipe Directions for Chopped Cucumber Salad with Pomegranate, Feta and Mint

In a large bowl, mix lemon juice and olive oil to make a dressing. Slice cucumbers into rounds ⅛-inch thick. Add cucumbers, pomegranate seeds and mint to bowl with dressing. Mix gently to coat and season to taste with salt and pepper. Just before serving, gently fold in feta.
