Recipe Ingredients for Chopped Chard and Bean salad

1 medium onion, diced
4 T. shallot, minced (whole)
3 cloves garlic, minced
15 oz. red beans, rinsed & drained
15 oz. chickpeas, rinsed & drained
8 c. swiss chard, rinsed and dried, stalks chopped, leaves cut into strips (1 bunch)
8 pieces sun dried tomatoes, chopped (handful)
1/2 c. pine nuts, lightly toasted
1/4 c. extra virgin olive oil
1/3 c. balsamic vinegar

Recipe Directions for Chopped Chard and Bean salad

Combine all the ingredients in a large bowl and toss to combine. Taste for seasoning and adjust of necessary. Serve cold or at room temperature.
