Recipe Ingredients for Chocolate Zucchini Cake

2 cups zucchini, peeled and shredded
1/2 cup unsweetened applesauce
2 teaspoon vanilla
181 g (1 1/3 cups) whole wheat flour
45 g (1/3 cup) soy flour
45 g (1/3 cup) buckwheat flour
1 1/4 cups Splenda granulated sugar
1 teaspoon salt
1 1/2 teaspoon baking soda
1/3 cup cocoa

Recipe Directions for Chocolate Zucchini Cake

  1. Mix zucchini, oil and vanilla.

  2. In a separate bowl, mix together dry ingredients.

  3. Combine dry ingredients to wet mixture gradually, stirring by hand. DO NOT BEAT! Batter will be thick.

  4. Pour and spread into 9x13 inch GREASED AND FLOURED or non-stick pan.

  5. Bake at 350 degrees for 25-30 minutes.

  6. Cool and frost with your favorite chocolate frosting if desired or top with fruit.
