A lower cal version of an old favorite!

Recipe Ingredients for Chocolate Zucchini Cake

2 1/2 cups finely grated zucchini
1 cup oil
1 1/2 cups splenda
1/2 cup brown sugar
2 eggs
1 teaspoons vanilla
1 cups whole wheat flour
1 cup flour
2 teaspoons baking soda
1 teaspoon cinnamon
1/2 teaspoon salt

Recipe Directions for Chocolate Zucchini Cake

  1. Preheat oven to 350 degrees F.

  2. In large bowl, combine oil, sugar, brown sugar, vanilla, and eggs and beat well.

  3. Stir in flour, baking soda, cinnamon and salt and mix well; batter will be very stiff.

  4. Add zucchini, and mix well (batter will start to loosen and soften). Pour into 13x9" pan and spread evenly.

  5. Bake at 350 degrees F for 45-55 minutes or until dark golden brown and cake springs back when lightly touched in center.

  6. Cool on wire rack.
