This is a healthy alternative to chocolate tea bread or chocolate muffins. There is ground flax seed incorporated to add healthy benefits. For loaves: makes about 18 servings. For muffins: makes about 24 muffins.

Recipe Ingredients for Chocolate Zucchini Bread

6 egg whites
1/4 cup smart balance light
1/2 cup unsweetened applesauce
1/2 cup packed brown sugar
2 teaspoons vanilla
1 cup all purpose flour
1 cup whole wheat flour
1/4 cup cocoa
1/2 cup ground flax seed
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
2 cups zucchini
1 cup semisweet chocolate chips (melted)

Recipe Directions for Chocolate Zucchini Bread

  1. For bread: Preheat oven to 350 degrees f. Lightly coat 2 - 9 x 5 inch loaf pans with cooking spray.

  2. In a large bowl, place egg whites smart balance, applesauce, brown sugar and vanilla. Beat with an electric mixer until thick and foamy. Add flours, ground flax seed, baking powder, baking soda, cocoa, cinnamon, and melted chocolate chips. Mix until well incorporated. Add zucchini and mix well. Place half of the mixture in each of the loaf pans. Bake for about 50 minutes or until toothpick inserted into the center of the loaves comes out clean. Cool on rack for about 10 minutes then turn the loaves out onto rack and cool until ready to eat.

  3. For muffins: Preheat oven to 400 degrees f. Line muffin tins with muffin cup liners or spray with cooking spray. Continue with recipe until you place the batter in muffin pans. Fill muffin cups about 2/3 full. Bake for about 20 minutes or until toothpick inserted in the muffins comes out clean. Cool as directed previously.
