Recipe Ingredients for Chocolate Zucchini and Apple Muffins

1 medium zucchini
1 granny smith apple
1/2 medium banana
1/4 c almond butter
1/3 c honey
2 tbsp cocoa powder
2 tbsp Organic Coconut Flour
1 tsp baking soda
1 tsp baking powder
1 tsp nutmeg
1 tsp vanilla extract
1 tbsp cinnamon
2 eggs

Recipe Directions for Chocolate Zucchini and Apple Muffins

  1. Preheat oven to 350

  2. Shred zucchini and apple

  3. Use paper towels to soak up excess water from the shredded ingredients, until they no longer feel soggy

  4. Mix wet ingredients and dry ingredients in separate bowls, making sure not to overwhisk the eggs

  5. Combine the ingredients by folding the wet ingredients into the dry ingredients

  6. Bake in a muffin tin for 15-20 min, or in a loaf pan for 20-25 min, until a toothpick comes out cleanly
