Recipe Ingredients for Chocolate Ricotta Rice-Soy Muffins

1 tbs Sugar
2 tsp Baking Powder
1/4 tsp Sea Salt
1/2 cup lowfat Buttermilk
1 large Egg, beaten
3/4 cup Rice Flour
1/4 cup Soy Flour
1/4 cup fat free Ricotta Cheese
1 tbs cocoa powder

Recipe Directions for Chocolate Ricotta Rice-Soy Muffins

  1. Preheat oven to 350F. Grease 6 muffin cups, set aside.

  2. In a medium bowl combine rice flour, soy flour, sugar, baking powder, baking soda and salt.

  3. In a small bowl combine buttermilk, riccota cheese, butter and egg. Slowly add the egg mixture to the dry flour mixture, stirring with a whisk to prevent lumps.

  4. Pour the batter into the prepared muffin tins. Bake for 20-30 minutes.
