One of my first gluten-free baking adventures in this transition.

Recipe Ingredients for Chocolate Ricotta Muffins-- GF

1 cup brown rice four
1/3 cup potato starch
1/6 cup tapioca flour
1/4 cup unsweetened cocoa powder
1/2 cup sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp xanthan gum
1/4 tsp salt
2/3 cup semisweet chocolate chips
1 large egg
1/2 cup reduced fat ricotta cheese
2/3 cup almond milk unsweetened
2 tbsp corn oil
2 tsp vanilla

Recipe Directions for Chocolate Ricotta Muffins-- GF

  1. Preheat oven to 350 degrees.

  2. Grease 12 muffin tins.

  3. Mix flours. Measure out 1 1/4 cups of flour mix to bowl.

  4. Add other dry ingredients.

  5. Stirring gently, add chocolate chips.

  6. Mix all other ingredients and mix well.

  7. Slowly add liquids to dry ingredients.

  8. Do not mix too much or quickly.

  9. Spoon into muffin cups.

  10. Bake 15-20 minutes.
