Recipe Ingredients for Chocolate Ricotta Hazelnut Pie


Crust:
1 1/2 cup all purpose flour
1/4 cup sugar
2 tbsp cornmeal
1 pinch of salt
1/2 cup toasted hazelnuts
1 stick unsalted butter, melted and cooled

Pie Custard:
3/4 cup ricotta cheese
1/3 cup cream cheese
1 whole egg
3 egg yolks
8 oz chocolate, semi-sweet, melted and cooled
1 cup simple syrup (boil water and sugar together, cooled)
1/4 cup toasted hazelnuts, chopped

Recipe Directions for Chocolate Ricotta Hazelnut Pie

  1. Crust:

  2. Add 1 1/2 cup all purpose flour into a food processor

  3. add some sugar

  4. 2 tbsp cornmeal to give it a bite/crunch to the actual crust

  5. pinch of salt

  6. for salt, add 1/2 cup of toasted hazelnuts

  7. put lid on, give it a little whirl

  8. add melted butter and pulse until all the dough come together

  9. Now that we've mixed it all together, put the pie dough on to the bottom of the tart pan.

  10. use your fingers and spread it out to cover all the bottom and sides of the tart pan.

  11. before we bake it, pop it in the fridge for 30 mins just to chill it

  12. line the tart dough with foil and fill it up with dried beans to weigh it down the crust and to keep it from puffing.

  13. Bake it at 350 at the lower third of the oven for about 25 mins.

  14. Carefully remove the beans and bake again until it's golden, for about 10 mins longer. then let cool completely.

  15. For the filling:

  16. add 3/4 cup ricotta cheese in processor.

  17. add 1/3 cup cream cheese

  18. add 1 whole egg and 3 yolks

  19. mix it all together

  20. add 8 ounces melted semi-sweet chocolate (cooled slightly)

  21. add simple syrup (boil water and sugar together)

  22. Mix it all together.

  23. Then pour the custard into the pie and pop it into the oven.

  24. Bake until the filling is almost set, about 30 mins

  25. Remove pie from oven and scatter remaining 1/4 toasted and chopped hazelnuts right on top.

  26. Let cool

  27. Serve and enjoy!
