Gluten Free Yummy Chocolate Bars with oatmeal based shortbread

Recipe Ingredients for Chocolate Raspberry Crumb Bars

3/4 cup butter
1 1/2 cups Oatmeal (ground)
3/4 cup Oatmeal (regular)
1/2 cup brown sugar
1/4 tsp. salt
2 cups Semi-Sweet Chocolate Morsels (12-ounces), divided
1 1/4 cups (14-ounces) Sweetened Condensed Milk
1/3 cup seedless raspberry jam

Recipe Directions for Chocolate Raspberry Crumb Bars

  1. Preheat oven to 350 degrees. Beat butter in large mixing bowl until creamy. In a food processor grind 1 1/2 cups oatmeal into flour. Add in brown sugar and salt. Add oatmeal mixture to butter and blend. Fold in 3/4 (or more) dry, whole oatmeal into batter. Spray 9 x 13 inch pan with Pam Spray. Gently spread 1/2-2/3 of oatmeal mixture on the bottom of the pan. Bake for 10-12 minutes until edges are slightly brown.

  2. Combine 1 cup chocolate morsals and sweetened condensed milk into a small, heavy duty saucepan. Melt over low heat, stirring until chocolate is melted and mixture is smooth. Spread over hot oatmeal crust.

  3. Crumble remaining oatmeal mixture over chocolate filling. Drop teaspoonfuls of raspberry jam over crumb mixture. Sprinkle with remaining morsels. Nuts may also be sprinkled over chocolate mixture at this point if desired. Continue baking for 20-25 minutes longer or until center is set. Cool and cut into bars.
